Modal Mix Special: The Full Spectrum
This new special brings you an exciting full range of styles: bubbles, white, orange, pink, red, and sweet. All very drinkable and nothing too bold, including the sweet wine which is a gorgeous Grüner Veltliner from Austria, not very sweet and super fresh, perfect with cheese or as an aperitif.
We've got complex bubbles from Spain, a fresh and textured white from Austria, a structured and saline orange wine from Slovenia, a savoury rosé from Tuscany, an inky and juicy Malbec from France, and a late harvest sweet Grüner Veltliner from Austria.

(Penedes, Spain) Entre Vinyes - Gran Funambul Brut Nature 2014
A textured and complex dry Cava made from very old vineyards in the protected park of Foix, Penedes. The wine spends over four years on its yeasts in the bottle, but still has a 'transparency' to it. The fruit is very much there, it's floral and bright alongside bready notes, and is remarkably elegant. Opulent but fresh at 11.5% abv
(Kamptal, Austria) Nibiru - Grundstein Grüner Veltliner 2018
Linear and mineral, dry and crisp. Very refreshing with just a touch of texture, and a distinct saline finish. Will comfortably accompany most meals.
(Goriška Brda, Slovenia) Atelier Kramar - Primario 2018
Gorgeous saline and savoury orange wine. A Rebula from Slovenia, this is a 'proper' orange with concentration as well as some structure (lovely fine tannins). It has a fascinating salty/caramelised finish. Perfect with spicy foods, white meats, or root vegetables.
(Tuscany, Italy) Fattoria di Sammontana - Primo Fuoco Rosato 2019
A wonderful, complex rosé made from the Merlot grape. The grapes are pressed as soon as they arrive at the winery, and the juice is transferred to a clay amphora where it ferments and then ages for 8 months. The result is a wonderfully tense and mineral, almost salty rosé. Initially shy on the nose, it then opens up into a proper elegant rosé. It also has a pretty incredible bright and deep pink colour!
(Cahors, France) La Calmette - Trespotz 2018
Malbec but not as you know it (+ tiny bit of Merlot). Unoaked, very juicy, inky and dense but so fresh and juicy. Showcasing the unique mineral-infused perfume of pure Malbec grown on a rare sliver of Kimmeridgian clay that runs through small parts of France's Southwest.
(Kamptal, Austria) Schenter - Grüner Veltliner Auslese 2016
A wonderful and unique sweet wine from a family estate in Austria. Made from late harvest Grüner Veltliner grapes, this wine fermented for longer than expected and hence ended up with a mild level of sweetness, less than your typical 'Auslese' wine. Amazing aromatic of dried apricots, ripe peaches, and honey, and an almost sweet/salty sensation on the palate. Pairs wonderfully with desserts that are not too sweet, or as a digestif/ aperitif/ cheese wine.
